The ultimate cut for slow cooking, use as you would lamb shank or beef shin. Braise slowly in the oven or on the hob or you can speed things up in the pressure cooker. Works wonderfully with red wine, bay leaves, juniper and thyme.

Braise until unctuous and falling off the bone.
