Saddle of venison comes from the back of the deer consisting of the two sirloins on the bone. Perfect for a special occasion as it really has the wow factor. Roast in a hot oven (220°C) for the first 25% of the cook time then reduce to 170-180°C to finish. Remove from oven when internal temp hits 55-57 degrees for a prefect medium rare after resting.
